My roots are deeply planted in the South. So any type of Southern or Cajun I am right there ready to dig in. I love all the ingredients that make up Cajun flavors. They create explosions in your mouth and leave you wanting more. This Cajun Seafood Pasta is no different.
I love seafood and so does my family so this makes the perfect dinner. You can add any type of seafood you want to this dish. I love adding shrimp and scallops. If we were living in the States I would definitely toss some crawfish into this dish. Experiment and find your favorite flavors for this dish.
If we are in a hurry this recipe can be fairly quick however if I have the extra time I like to slow simmer the sauce for a while to really get the flavors meld together.
I used Penne pasta in the recipe but feel free to use any type of pasta you want. I sometimes like to switch it up and use angel hair pasta or spaghetti. Also if you aren’t a big fan of spicy feel free to replace the jalapeños with bell peppers. I sometimes do this when the kids will be eating it.
The last thing I normally add to just about all my pasta dishes is a good heaping dash of a great white wine. It adds so much flavor to the sauce after simmering and really brings out the flavors of the seafood. Of course you can omit this if you want. My favorite two types of white wine to cook with are Pinot Grigio and Sauvignon Blanc.
- 1 Box of penne pasta
- 1 pound of raw shrimp ( size your choice )
- 1 pound of raw scallops
- 1 cup of cherry tomatoes
- 2 diced Jalapeños seeds removed
- ½ onion, diced
- 1/4 cup of caramelized garlic
- 1 lemon for fresh juice
- 1/4 cup of butter
- 2 tbsp. of olive oil
- 4 tbsp. of Cajun spice
- 1 Tbsp. of pepper
- salt to taste
- Dash of White Wine (or two)
- In a large bowl add your rinsed off shrimp and scallops, season with your salt and pepper and cajun spice. Add your olive oil to a large cast iron pan heat on medium to high. Now add your shrimp and scallops
- Slice your lemon in half and squeeze the juice on the fish and season with salt or pepper Cook for a few minutes until the shrimp are pink and scallops turn a white solid color.At the same time in a large pot cook your penne pasta as directed on the box. Remove the shrimp & scallops once they are done from the pan and set to the side. Reduce the heat to low and add your butter and diced jalapeños and onions. Add your dash or two or three of wine and let simmer for 5 minutes stirring often so you do not burn the butter. Add your pasta and seafood to the sauce and stir to combine. Garnish with lemon zest.

Whenever I can bring in my Southern roots and Cajun flavors here to Norway I definitely try. It makes me feel like I’m home again. Plus it makes my family extremely happy which makes me happy. This dish is a big hit with everyone and I’m sure it will be a big hit in your house too.
